EASIER - THAN - IT- LOOKS RECIPE: Turtle Pumpkin Pie

Linda is making this dessert for our Thanksgiving Dinner. I'm pretty sure there will be other things at our family Dinner, but I'll be looking forward to this as a beautiful ending to the meal. We haven't actually tried it yet, so I can't recommend it based on our own experience, as I usually do, but it seems to have all of the right flavors for me. And it seems easy. She found it as an advertisement in a PEOPLE Magazine (Nov. 16, 2009), and will add it to her RED COOKBOOK. We want to hear from those of you who try it. TURTLE PUMPKIN PIE

Ingredients:

1/4 cup plus 2 Tbsp. caramel ice cream topping, divided

1 graham cracker pie crust (6 oz.)

1/2 cup plus 2 Tbsp. chopped pecans, divided

2 pkg. (3.4 oz. each) vanilla flavor instant pudding

1 cup cold milk

1 cup canned pumpkin

1 tsp. ground cinnamon

1/2 tsp.ground nutmeg
1 tub (8 oz) whipped topping, thawed, divided

POUR 1/4 cup caramel topping into crust; sprinkle with 1/2 cup nuts.

BEAT pudding mixes, milk, pumpkin and spices with whisk until blended. Stir in 1 1/2 cups whipped topping. Spoon into crust.

REFRIGERATE 1 hour. Top with remaining whipped topping, caramel topping and nuts just before serving.

Prep Time: 15 minutes, plus refrigeration time. Serves 10
